Don't worry too much about the jargon of it all, the important thing to note is the better the performance is on the way in, the less time will need to be spent on editing. If you have great musicians laying down the tracks, or maybe you are going for a loose, unprocessed vibe, you may find you don't need much editing, if any. However, if you're going for a polished, commercial sound, editing will be a chunk of time added to your quote.
